Livin' La Vida Lo-carb

Wish I could take credit for the phrase - hope it isn't copywritten...

Anyhow, we're always on the lookout for recipes that will allow Izzy and me to be able to eat the same meals. I'd seen a suggestion to use portabella mushrooms as pizza crusts, which we tried this PM. Not bad for a first try - tasty, garlicky filling, but the 'shrooms kept weeping. So, doing what I should have done before making the suggestion, I hit the web looking at/for low-carb pizza recipes, portabella pizzas, etc. We think we've found a couple of strategies, and will be trying the 'shrooms again, soon, I hope!

As everyone on the blogosphere knows, hitting the web for one things means you will eventually wind up some where else, fascinated by something else. Which brings me to this discovery: World's possibly weirdest recipe for lo-carb pancakes.

Ingredients

  • 1 c of crushed pork rinds
  • 1/2 tspn vanilla flavoring
  • 1/2 tspn cinnamon
  • 3 packages Splenda sugar substitute
  • 1/4 c of cream
  • 2 eggs

Directions

  • If you have a food processor your (sic) going to want to use it for the pork rinds other wise (sic) crush them with your hands.
  • Then beat the eggs and then the rest of the ingredients.
  • Take those pork rinds and now add those and allow this to sit for about 5 inutes (sic) or so.
  • Now that it's ready heat up your pancake pan or griddle and start making pancakes.

Simple, easy to follow directions. Who doesn't want to find a way to eat pancakes again? What's not to like???

are them there BBQ, ranch, nacho cheese, or plain pork rinds you use in them pancakes?

Whatever you'd prefer. I might be partial to nacho cheese.
